Instead of a full blog post this week, I’m just going to keep it short and juicy and share my all time favorite summer recipe with you!
This salad is a crowd pleaser. I have never met anyone who didn’t love it. If you’ve got a potluck or BBQ to go to, you will be THE HIT of the party. It’s also a perfectly balanced cooling food.
What you eat can be therapeutic if you make conscious choices. The watermelon is sweet, hydrating and releases heat from the body. The olives and feta add a little salty electrolyte action to make sure your body holds onto the fluids. The mint is cooling and refreshing. The pungent nature of the onions promotes just a touch of sweat, which will cool you down. A perfect mix!
The Perfect Summer Watermelon Salad
- ½-cubed watermelon
- 3-4 oz. of crumbled feta cheese
- ½ red onion, thinly sliced
- ½ jar (about 6 oz.) of kalamata olives, sliced into halves or quarters
- ¼ cup roughly chopped fresh mint
- A drizzle of olive oil
Optional add-ins: toasted pumpkin seeds, a drizzle of balsamic, arugula or basil
